ABSTRACT:
The increased interest by consumers in foods that
provide benefits beyond their traditional nutritional value has encouraged the use of natural antioxidant extracts, especially polyphenol extracts, as food additives and
supplements. This article looks at the use of NIR spectroscopy for the quantification of compounds in a number of herbal and medicinal plant species.
