ABSTRACT:
Solid fat content (SFC) is an important parameter in the dairy industry. Current industry practice is to
use at-line NMR, using a method approved by the American Oil Chemists' Society. This article explores the use of NIR as an alternative, which could greatly speed up the
analyses.
