Hamed - a full discussion cannot be put into a short answer on the discussion group. There are several books and short courses available on the topic, however.

Some books:

"Handbook of Near Infrared Analysis" (2nd ed); Burns, D.A and Ciurczak, E.W., eds; Marcel Dekker (2001)

"Near Infrared Spectroscopy in Food Analysis"; Osborne, B.G and Fearn, T.; Longman Scientific and Technical (1986)

Both of these books cover the basics of spectroscopic theory and how it's applied to making analytical measurements in the NIR spectral region; this normally includes the application of advanced mathemtical techniques (called "Chemometrics") to extract analytical information from the raw spectral data. You can find both of these books, and others on the host web site for this discussion group.

Instrumentation, of course, advances and changes continually as new applications arise and new technology is brought to the field.

There are also short courses available that are given periodically. As it happens, one is about to presented in two weeks in Amsterdam, under the auspices of the Center for Professional Advancement (http://www.cfpa.com) Others are given at various times and places, often in conjunction with major analytical meetings (Pittcon, FACSS and EAS in the USA, for example).
