There is quite a lot of literature in the journals. I published something a while ago:

Hello,

We have done a lot of work on developing equations for malt quality. I work for a large barley breeding program and we have been using NIR to determine malt characteristics on whole, unmalted barley.

We have had success with Extract, DP, AA, malt b-glucan, turbidity, viscosity, soluble and total protein.

All of our work has been done using research samples of pure genetic lines, and we are in the process of expanding our database to include more commercial samples.
