The wine industry requires rapid, comprehensive methods and techniques to answer the new challenges driven by market demands. The aim of this study was to explore the potential of NIR spectroscopy and chemometrics in establishing the function of genes by investigating the metabolic profiles produced by Saccharomyces cerevisiae deletion strains sourced from the Euroscarf yeast collection.
